Spinach Salad with Poppyseed Dressing

I fell in love with the Costco Spinach Salad with Poppyseed dressing.  I had been going in every Monday and having it for lunch all week long! This has been going on for quite some time.  Costco is sometimes out of the way for me so I decided to make my own at home. Check out this amazing Spinach Salad with Poppyseed Dressing!

There are so many things you can add to this salad.  In this photo, I didn’t add tomatoes.  I go days with loving tomatoes and then I don’t want them again for a while. Apples, cranberries, oranges, fresh vegetables, croutons, candied walnuts or pecans, the possibilities for this salad are endless. 

In this recipe, you can use bottled dressing or check out our Homemade Poppyseed Dressing! It is amazing and so easy to make!

Ingredients

  • 1.5 c Baby spinach thouroughly washed, dried
  • 2 Hard boiled eggs, sliced or diced
  • 2 slices Cooked bacon, crumbled
  • 1/4 c Shredded Part Skim Low Moisture Mozzarella Cheese
  • Diced Onion to taste
  • Poppyseed Dressing Bottled or check out our easy Homemade Poppyseed Dressing. Link in Article!

Instructions

  • Layer Ingredients and add Poppyseed Dressing to taste.
