While you can make your own salad dressing for this recipe, I have fallen in love with the Simple Girl Salad dressings. They are all low point, delicious and so easy to grab and go. Most are zero SmartPoints per serving, but it does vary depending on the flavor.

Chinese Chicken Salad
Ingredients
- 2 cups shredded rotisserie chicken
- 1 cup shredded brussels sprouts
- 1 cup Kale, chopped
- 1 cup Napa cabbage, chopped
- 1 cup Green Leaf Lettuce, chopped
- 5 stems green onions, chopped
- 1/4 cup carrots, shredded
- 1/4 cup crunchy noodles
- 1 bottle Simple Girl Citrus Ginger Dressing
Instructions
- Combine all vegetables (kale, lettuce, brussels sprouts, cabbage, carrots, and onions) and toss until well-combined.
- Top with chicken, crunchy noodles, and a drizzle of Citrus Ginger salad dressing.
- Serve.
This makes 4 servings at around 2 cups each.
