Crockpot Cilantro Lime Chicken

Crockpot Cilantro Lime Chicken is an easy freezer chicken crockpot meal. When prepping this freezer meal the smell of the lime juice and cilantro was amazing. Crockpot Cilantro Lime Chicken is perfect served in a lettuce wrap! Great for lunch at work or a light dinner. This is a healthy dinner that everyone will love!  This meal is also gluten free (just serve with gluten free tortillas, with a lettuce wrap or over rice).

Crockpot Cilantro Lime Chicken is a great freezer meal!

This easy freezer meal only takes minutes to assemble and will slowly cook all day to an incredible dinner. Now I have to warn you that once it’s cook that it does not look very pretty but it does taste incredible! I served it on tortillas for the family and used toppings such as shredded cheese, sour cream and avocados. For myself I used romaine lettuce and made it into a lettuce wrap.

I will definitely make this crockpot meal again!  It would also be delicious served over rice.  When preparing as a freezer meal you can freeze the chicken raw and then cook it in the slow cooker for best results.

Crockpot Cilantro Lime Chicken

Ingredients

  • 2 chicken breasts I used 1 lb
  • 1 bunch of fresh cilantro chopped
  • 1 red onion chopped
  • 1 can of black beans drained & rinsed
  • 2 cups of frozen corn
  • 2 tsp minced garlic
  • 1 tsp ground cumin
  • Juice squeezed from 2 Limes
  • tortillas or lettuce for serving
  • shredded cheese for serving
  • sour cream for serving

Instructions

  • Place all ingredients in freezer bag.
  • Freeze flat.
  • Thaw overnight in fridge.
  • Dump in crockpot and cook on LOW 8 hours or HIGH 4 hours.
  • Shred chicken and stir mixture together.
  • Serve in tortillas and enjoy.

  2. Do you need to cook the chicken before freezing it?! Or freeze the chicken raw and let it cook in the crock pot? Thanks for the recipe, looks yummy!

    1. You can freeze it raw and it will cook perfectly in the crock pot. This is also really good over rice!

    I have a huge amount of people coming for the holidays and these recipes will be a lifesaver between working and entertaining. Put it in the crockpot in the morning for dinner that night. I did what I call the cheater method. Doubled the recipes and used crockpot liners. Instead of putting them in ziplock bags I put the liner in a empty 5 qt ice cream tub, fill it and twist tie it shut. Freeze it them remove it from the container. I have a large rival crock pot and the bag fits perfectly in it out of the freezer.

    Delicious! Makes a ton too (BO-NUS!) for serving over rice and then later in flour tortilla shells. Was pleasantly surprised by the flavor – not your typical mexican flavoring. Enjoyed by everyone (2 to 52)!

  5. if you are just doing the original recipe for 4-6 servings, what size crockpot do you use? Seems like a 5 at would be way too big for just two chicken breasts. Thanks!

  6. Hello. Is it absolutely necessary to freeze the ingredients before cooking them, or is this just something you do to have crock pot meals on the ready?

      I had to add one cup of water—then it was perfect. First time too dry and overcooked. Second time I took out of juice to shred then replaced to moisten meat…then drained a little before putting on tortillas. YUM!

  7. If using cooked chicken (I typically cook a whole chicken and then cut into pieces to eat and freeze), how long should we be cooking this for? Thanks so much—can’t wait to make this!

    1. Hey Meg,

      I do that often too! You would not want to add cooked chicken to this until the last 30 minutes or so (basically just to reheat) so that it doesn’t get overcooked and rubbery. I would suggest cooking on low for 2-4 hours and then adding in your cooked chicken the last 30 minutes 🙂 Enjoy!

    We loved this one! Served it on warmed corn tortillas and my roomie had it over a baked potato. I thought she was crazy but it actually tasted great. This was #4 out of our 8 crockpot meals- we’ve been having fun. Couldn’t resist throwing in hot sauce and jalepenos bc we love the heat in my house! Thanks for the recipes.

  9. I do not like cilantro (to me it tastes like dish soap). Is there another herb you would suggest? Or would this still taste good if I just ommitted the cilantro?

    Serve this with Mango Salsa and it’s especially delicious!! This has become one of our staple family recipes over the years. Whenever a friend is having a baby, I prepare this freezer meal for her. It’s so convenient to have a no-fuss meal like this on hand.
