Bean Salsa Recipe is perfect for Game Day

March Madness is here! It is one of my favorite times of the year and Bean Salsa Recipe is perfect for Game Day! Kroger recently sent me a fun box of their favorite goodies and I couldn’t wait to make something! I unboxed it on Facebook in case you didn’t get a chance to see it. They included a variety of Private Selection, Kroger Brand and Simple Truth products. With products like black beans, salsa, blue corn tortilla chips, diced tomatoes with green chiles, diced jalapenos and more!
You may not be familiar with the Kroger family of brands. We use them often and wanted to share with you that Kroger has hundreds of different products, of which you might not be aware. Check out this simple appetizer recipe for Bean Salsa, or as some people call it Cowboy Caviar, that I made using some of the products they included.
Bean Salsa is very simple to make, however most people can’t tell that it is made with canned ingredients. I think the fresh cilantro really gives it a great flavor too! Serve it up with Kroger Brand Blue Corn Tortilla Chips. I am planning to enjoy this while I watch Kentucky play! Go Big Blue!
This is the perfect recipe for a picnic or cookout, there are no worries for refrigeration like other salads made with mayonnaise. Bean Salsa Recipe is perfect for Game Day and I hope you enjoy it as much as we do!
Bean Salsa
Ingredients
- 1 can Simple Truth brand black beans drained and rinsed
- 1 can Kroger Brand diced tomatoes with green chilies
- 1 can Kroger Brand Mexicorn drained
- 1 can Kroger Brand black-eye peas drained
- 3/4 bottle Kroger Brand Italian dressing
- 1/2 cup fresh cilantro OR 1/4 to 1/3 cup dried cilantro
- 1 package Private Selection Blue Corn Torilla Chips - to serve
- Optional
- 1 can black olives (small) chopped
- 1 medium onion chopped
- 1 whole green pepper chopped
Instructions
- Mix all of the ingredients together and refrigerate.
- I like to serve cold but it is good at room temperature too.
- Serve with corn chips and enjoy.
