Slow Cooker Pork Carnitas

Slow Cooker Pork Carnitas are so easy to make and perfect for an easy dinner or Mexican Fiesta!

There is nothing better than an easy crockpot dinner recipe! Slow Cooker Pork Carnitas are one of the best! My family LOVES Mexican food and when I can prepare it in the slow cooker that means an easy day of meal prep for me! I use the crockpot at least 5 nights a week and sometimes 7. Check out our  20 freezer meals in 4 hours ! This is my signature dish and it is a really easy pork chop dish to prepare. It took me 15 minutes to prep using my Good Cook Knives.

It was literally as easy as slicing butter with these Good Cook non-stick knives. I am in love with these knives!  They are so nice to work with and the prep bowls are perfect!  This delicious dinner can be ready in 5-8 hours depending on if you cook it on low or high. Just add all the ingredients and then forget it about it while you go on about about day.

This is a delicious low carb recipe when you serve it on a bed of lettuce or with a low carb tortilla.  I like to serve this dish with Homemade Guacamole and Crockpot Black Beans. I hope you enjoy it as much as we do!

Slow Cooker Pork Carnitas

Cook Time:8 hrs
Total Time:8 hrs 15 mins

Ingredients

  • 3 lbs boneless pork chops
  • 1 onion diced
  • 1 yellow pepper sliced
  • 1 orange pepper sliced
  • 1 red pepper sliced
  • 2 garlic cloves crushed and minced
  • 2 TBSP chili powder
  • 1 TBSP. cumin
  • 2 bay leaves
  • 1/2 cup taco sauce
  • 1/2 cup water
  • salt and pepper to taste

Instructions

  • Place water in crockpot
  • Add Pork Chops
  • Place all ingredients on top and slightly stir
  • Cook on high for 5-6 hours or low for 7-8 hours.
  • Shred meat with a fork or sharp knife on a cutting board.
  • Serve with tortillas, cheese, salsa, lettuce, tomatoes, guacamole, sour cream or any other topping that you prefer.
