Farmers Market Stuffed Baked Tomatoes


Going to the Farmer’s Market has always been one of my favorite things to do!  This year we planted a huge garden and we had so much we had to give a lot away!  There is nothing better than fresh produce.  Whether you have a garden at home or visit the Farmer’s Market, this Farmers Market Stuffed Baked Tomatoes recipe is sure to please!

Farmers Market Stuffed Baked Tomatoes


4 tomatoes
6 tablespoons ricotta cheese
1/4 cup chopped fresh spinach
1 garlic clove, minced
1/4 teaspoon dried thyme
2 tablespoons finely grated Parmigiano Reggiano cheese.


Preheat oven to 400F. Cut tomatoes in half crosswise. Combine ricotta cheese, chopped fresh spinach, garlic, thyme and grated Parmigiano Reggiano cheese. Top each tomato half with 2 tablespoons ricotta mixture. Bake 10 to 15 minutes.
