Colby Jack BBQ Chicken

If you are looking for a new easy weeknight meal, this is it!  I just threw this together one day and my family loved it.  My oldest son actually ate his piece and half of mine.  The chicken is so tender and juicy, and the mixture of bacon, Colby jack, and BBQ sauce is amazing! Your family will approve this Colby Jack BBQ Chicken Recipe!

Colby Jack BBQ Chicken

If you are looking for a new easy weeknight meal, this is it!  I just threw this together one day and my family loved it.  My oldest son actually ate his piece and half of mine.

Ingredients

  • 4 whole Boneless Skinless Chicken Breasts, pounded to around 1 inch or less.
  • 1 bottle Kickin Chicken Seasoning
  • 1 TBSP Garlic Powder
  • 8 pieces cooked bacon, we like thick sliced
  • 1 package  Colby Jack Cheese, shredded
  • 1 bottle BBQ Sauce

Instructions

  • Pound each piece of chicken to approximately 1 inch.
  • Cook 8 pieces of bacon in frying pan or electric skillet. I use my electric skillet for almost everything. I leave the bacon grease in the skillet. If you cook the whole package of bacon you will want to remove half of the grease. You can also remove all grease and use olive oil.
  • Sprinkle each side of the chicken with Kickin Chicken and Garlic Powder. I lightly cover each side.
  • Brown chicken in skillet over medium high for 6 minutes. Approximately 3 minutes on each side.
  • Preheat oven to 350°
  • Place chicken in a greased baking dish.
  • Add desired amount of BBQ sauce to the top of the chicken, then place 2 pieces of bacon on top of the sauce, and top with Colby Jack Cheese.
  • Bake at 350 degrees for 20-25 minute or internal temperature is 165°-175°. Watch carefully so that your cheese does not burn. Every oven is different.
