Watergate Salad

Watergate Salad is the perfect side dish for Christmas or Easter. This is a family favorite that is so easy to prepare and tastes amazing.

This is a salad that Mamaw Hice always serves at holiday meals. It is the perfect side dish for any holiday or special occasion.

If you aren’t a fan of Pistachio don’t worry. I am not a huge fan myself and you don’t get a heavy flavor. It is light and fresh with the crushed pineapple. We always garnish it with maraschino cherries before serving.

What I love is this is an easy salad to prepare. Just mix your ingredients together and then fold in your cool whip. I personally always leave the nuts out and stir those into for those who want nuts. My son doesn’t like them so that way he still enjoys the salad because you can add them last minute. I do always garnish it with a cherry as it adds some nice color!

It is the perfect color combination of green and red for Christmas. Be sure to give this Watergate Salad a try!

Equipment

  • 1 Bowl

Ingredients

  • 1 box 3.4 oz. instant pistachio pudding
  • 1 small 8 oz. carton cool whip
  • 1 20 oz. can crushed pineapple (with juice)
  • 1 cup pecans, chopped
  • 1 cup miniature marshmallows

Instructions

  • Mix all ingredients except cool whip together in a bowl.
  • Fold in cool whip
  • Cover and chill.
  • Garnish with nuts and cherries before serving.
