Vegetable Kabobs
I love to grill Vegetable Kabobs with fresh veggies from my garden or the farmers market. I try to serve a Vegetarian dinner once a week.
It is a great way to save money and sneak in some extra vegetables into my families diet. These delicious vegetable kabobs are filling and so tasty. I love how easy they are to prepare.
I like to serve them with rice or quinoa. You know it is always an easy dinner for Mom when Dad grills. This is also a gluten free and paleo recipe. Vegetable Kabobs are easy to prepare and a delicious vegetarian entrée or side dish.
A tip is to soak your wooden skewers so they do not burn. Just fill your sink or a bowl with some water and let them soak for at least 30 minutes before you use.
These kabobs are so much fun to make and enjoy as a side dish recipe in the summer too. We hope you enjoy them as much as we do! Best of all everyone can customize with what they like to eat.

Vegetable Kabobs
Ingredients
- 1 whole Zucchini
- 1 whole Squash
- 1 container Mushrooms
- 1 whole Red Onion
- 1 container Cherry Tomatoes
- 1 whole Red Pepper
Instructions
- Soak wooden skewers in water for 15 minutes and dry.
- Slide vegetables onto the skewers.
- Brush with olive oil and sprinkle with salt and pepper.
- Grill for 20 minutes and enjoy!
- Serve with rice or quinoa.
