Sweet Potato Casserole

Sweet Potato Casserole is a family favorite recipe for the Holiday’s passed to me from my mom. It is great served with Ham or Turkey on Thanksgiving or Christmas!

It is like dessert to me!  No holiday is the same without it! We have modifications if you are making it gluten free.  I am happy that my mom modified it for us so that we could all enjoy it. This is one of the most requested recipes of from all of our family members.

We hope you enjoy this delicious side dish recipe as much as we do! Hands down sweet potato casserole is our favorite recipe at every holiday gathering.

Sweet Potato Casserole

Ingredients

  • 3 cups sweet potatoes, cooked or canned (I use a 29 oz. can, drained)
  • ½ cup brown sugar
  • 2 large eggs, beaten
  • ½ tsp salt
  • ½ stick butter or margarine, melted
  • ½ cup evaporated milk
  • 1 ½ tsp vanilla

Topping:

  • ½ cup brown sugar
  • 1/3 cup flour King Arthur brand if adapting gluten free
  • 1/2 cup chopped pecans
  • 1/3 stick butter or margarine melted

Instructions

  • Mash sweet potatoes. Add sugar, eggs, salt, butter, milk and vanilla. Put mixture into an 8x8 casserole dish. Mix topping ingredients and spread over sweet potato mixture. Bake at 325 degrees for 30 minutes.
  • To double recipe: double all ingredients and bake in a 9x13 dish at 350 degrees 30 minutes or until top is brown and mixture no longer jiggles
