Pickled Beets
I LOVE Pickled Beets! They are one of my favorite vegetables. In fact beets are in general. Did you know that beets help prevent cancer? I learned this when I was taking one of my nutrition courses in college.
Here is a recipe for how to make homemade pickled beets.
Drain a can of sliced or small whole beets (or you can clean and cook your own).
Slice a medium onion thinly and add to beets.
In a saucepan, bring to a boil a cup of cider vinegar, sugar to taste (start with about 1/3 cup) and a dash or two of salt.
Pour this over beets.
You can also add a dash or two of allspice or cloves.
Cool and chill.
It is that simple! I hope you enjoy these homemade pickled beets as much as I do.
