Margarita Cake Recipe

If you love Margarita's you are going to love this cake! Perfect for any occasion!

My friend Carrie made this Margarita Cake Recipe for me this summer when we went to see Jimmy Buffet in concert.  I think this cake would be perfect for Cinco de Mayo too!  It can be made either gluten free or traditionally.  We have included modifications for both.

I was thrilled that after my recent open heart surgery that she made this Margarita Cake Recipe for me again! My Mom, who is also gluten free, enjoyed it too! Tim also loves it and honestly you would never know it is gluten free! It is so moist and delicious. You can serve with Homemade Whipped Cream (or store bought) if you want!

Ingredients

Cake:

  • 1 box 18.25 ounce package orange cake mix
  • ***I used Betty Crocker Gluten Free yellow cake mix needed to purchase 2 cake mixes as each one was only 15 oz and 1 tablespoon of McCormick's Pure Orange Extract***
  • 1 box 3.4 ounce package instant vanilla pudding mix
  • 4 large eggs
  • 1/2 cup vegetable oil
  • 2/3 cup water
  • 1/4 cup lemon juice
  • 1/4 cup tequila
  • 2 tablespoons triple sec liqueur

Glaze:

  • 1 cup confectioners sugar
  • 1 tablespoon tequila - be sure you use a gluten free choice
  • 2 tablespoons triple sec liqueur - be sure you use a gluten free choice
  • 2 tablespoons lime juice

Instructions

  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease and flour - with gluten free cake mix or gluten free flour a 10 inch Bundt pan. *** I used excess G-free cake mix to "flour" the cake pan***
  • In a large bowl combine cake mix, pudding mix, eggs, oil, water, lemon juice 1/4 cup tequila and 2 tablespoons triple sec.
  • Beat for 2 minutes.
  • Pour batter into prepared pan.
  • Bake in the preheated oven for 45 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  • Cool in pan for 10 minutes; remove to rack and pour glaze over cake while still warm.
  • To make the glaze: In a small bowl, combine confectioners' sugar with 1 tablespoon tequila, 2 tablespoons triple sec and 2 tablespoons lime juice. Mix until smooth.
