Copycat Chipotle Cilantro Lime Rice

My son LOVES Chipotle rice. So I decided to come up with a Copycat Chipotle Cilantro Lime Rice Recipe. In fact I know he would eat there 7 days a week if I let him.  What is funny though is that he only orders the rice with cheese on it and of course a side of guacamole and chips.  I decided that I wanted to find a quick and easy version so that I could start making his favorite rice at home and for a fraction of the cost.

I also don’t have a long time to prepare his favorite dish because we are busy in the evenings with soccer practice so I decided I wanted to create an easy version of this popular rice.  This recipe was so easy to prepare because it uses Success® Basmati Rice. It literally took me less than 15 minutes from start to finish!

I like to cook with instant boil-in-bag rice because of the speed in which I can have it on the table. However I often get overwhelmed with the idea of coming up with quick and easy recipe ideas that aren’t bland.  My son is not a big fan of plain rice which is why this recipe appeals to me.  It is quick and easy to prepare and goes with a variety of main dishes.

This is going to be our new favorite go-to rice dish for sure!  We love Mexican cuisine and it is on our menu plan every week. Now it is going to be so easy to change up the plain rice and make it something that the whole family will enjoy and that I can prepare with no concern of time since we are on the go with soccer practice. You can easily make this with brown rice too.

Copycat Chipotle Cilantro Lime Rice

Cook Time:10 minutes
Total Time:15 minutes

Ingredients

  • 2/3 cup Success® Basmati Rice.
  • 1 tsp olive oil
  • 1 cup fresh cilantro
  • 1/2 tsp salt
  • 1 lime
  • 1 bay leaf

Instructions

  • In a pan prepare 1 package of Success® Basmati Rice with 1 bay leaf in the water
  • After it is done remove the bag and drain off excess water. Discard bay leaf.
  • Open package and pour into a bowl.
  • Add olive oil, salt, juice from 1 lime and stir well.
  • Add cilantro and combine.
  • You can double or triple this to feed your family if necessary. I generally always double this recipe.
