Whole 30 Plantain Nachos
I am loving these Whole 30 Plantain Nachos. One thing I craved and missed most when I started the Whole30 was corn chips. NOT sugar but corn chips. We always make nachos for every sporting event at our house. It is the one thing I can eat with the family that is gluten free that everyone enjoys. However since starting the Whole30 that is no longer an option.
When I learned that Trader Joes plantain chips were Whole30 compliant I thought there is no way that I will like those. With the Superbowl on the horizon I drove to Trader Joe and picked up 2 bags. I decided to open a bag and give them a try and let me say – they are not good. They are FANTASTIC! If you are missing chips, crackers or corn chips on Whole30 you are going to fall in love!
On the evening of the Superbowl I decided to turn my new favorite snack into nachos and let me tell you they were delicious! So easy to prepare and really gave me a satisfying feeling that I was enjoying an appetizer just like everyone else while we watched Peyton Manning in his final game of his career. It was awesome and I didn’t feel left out at all. I now enjoy them with tuna salad, chicken salad, guacamole or my salads. I don’t use them as a snack (in between meals) and I limit how many I consumer but they are a nice addition to my meals occasionally.

Whole 30 Plantain Nachos
Ingredients
- Trader Joes Plantain Chips
- Black Olives sliced
- 1 lb ground beef
- Avocado
- Yais Thai Salsa
- Primal Palate BBQ Rub
Instructions
- Brown Ground Beef and remove fat
- Add 1 TBSP Primal Palate BBQ Rub and 2 TBSP water
- Stir and mix in seasoning well.
- Arrange plantain chips on a plate and add seasoned beef.
- Add black olives, salsa and avocado
- Enjoy!
