Spinach Artichoke Dip

My Mother-in-Law, Brenda Hice made it for us to munch on during the TN game this past weekend. The secret ingredient is the Alfredo sauce! Best of all this is a great low carb appetizer.  Instead of using tortilla chips simple use some fresh veggies! I LOVE spinach artichoke dip and this has a easy shortcut method that is perfect for saving a little time in the kitchen. That is always a win for me when I find recipes that are easy.

This is such and easy appetizer! When I asked her how she made it I couldn’t believe it was with Alfredo sauce.  With only 7 ingredients it is affordable and easy to prepare. With only 10 minutes of prep time and 30 minutes in the oven this is a recipe that is going to be added to my party planning menu.

Simply chop up your canned artichoke hearts and frozen spinach (after it is thawed) and then combine all your ingredients together except for your 1/2 cup of mozzarella cheese. Once combined put into a 9 inch pie pan and then cover with 1/2 cup mozzarella cheese. Bake at 350 degrees for 25 minutes or until it browns. This is a gluten free recipe IF you use gluten free Alfredo sauce!

Serve with your choice of tortilla chips, Fritos or an assortment of veggies. This is the perfect appetizer for game day, family gatherings or parties. Everyone loved this simple recipe and is already asking for it again!

Equipment

  • 1 pie plate

Ingredients

  • 1 14 oz. artichoke hearts drain and chop but keep chunky
  • 1 10 oz. box frozen chopped spinach, drained thaw and re-chop
  • 1 10 oz. jar of prepared Alfredo sauce we used Bertolli
  • 1 cup shredded Parmesan cheese
  • 1 4 oz. cream cheese softened
  • 1 cup shredded mozzarella cheese
  • 1 tsp fresh garlic

Instructions

  • Combine all ingredients except 1/2 cup mozzarella cheese.
  • Put in a 9 inch pie pan and sprinkle with 1/2 cup mozzarella cheese.
  • Bake 350 degrees for 25 minutes or until it starts to brown.
  • Serve with Frito's or tortilla chips

    Absolutely not low calorie – even tho I used low-fat moz. Delicious. Makes A-LOT – great for parties or large gatherings! Suggest you put on a cookie sheet so it doesn’t spill over.
