Weight Watchers Peach Berry Cobbler
Ingredients
- 3 cups peaches sliced
- 1 cup blueberries
- 1/4 cup sugar
- 1/4 cup water
- 1 teaspoon vanilla extract
- 1 cup nonfat plain Greek yogurt
- 1 cup self-rising flour
Instructions
- Preheat oven to 375 degrees.
- Spray a 9"x13" baking dish with non-stick spray and set aside.
- In a large bowl, mix together the flour, Greek yogurt, water and vanilla extract until it forms a dough.
- Lightly flour a clean work surface and turn out dough onto surface. Roll to 1/2" thickness, and cut in half. Use 1/2 of the dough to cut long strips to go on the bottom of the baking dish. The other 1/2 of the dough can be cut into small pieces to place on top of the cobbler.
- Use 1/2 the dough to place strips on the bottom of the baking dish. It will not cover the dish, but will just be a few strips on the bottom.
- Pour peaches and blueberries on top of dough in baking dish, and sprinkle with sugar. You may mix together if preferred, but sprinkling on top works fine.
- Top with remaining dough. May sprinkle additional sugar on top if wanted.
- Bake at 375 degrees for 35 minutes.
