Southwest Chicken Rice Bowl
Southwest Chicken Rice Bowl is a great recipe to make using left overs from Crockpot Southwest Chicken. A few weeks ago I made the delicious freezer meal and had some left over. I then came up with the idea of making a Chipotle inspired rice bowl. So, that’s how Southwest Chicken Rice Bowl came to life!
Southwest Chicken Rice Bowl is a great leftover recipe! I was able to make in less than 30 minutes for dinner.
All you need is the Southwest Chicken, rice, black beans and lettuce. My husband likes to add shredded cheese and sour cream to his. I am trying to eat clean so I stayed from them. Next, you just layer starting with rice, beans, then put the chicken mixture and top with shredded lettuce. It is really simple and I was able to heat everything up and have it ready in less than 30 minutes!
Southwest Chicken Rice Bowl
Ingredients
- Leftover Crockpot Southwest Chicken
- 1 can black beans
- 2 cups prepared rice
- shredded lettuce optional
- shredded cheese optional
- sour cream optional
Instructions
- Heat chicken mixture in pot just til warm.
- Heat black beans in pot or in microwave.
- Take a bowl and layer rice, beans, chicken mixture and lettuce and/or any other toppings as desired.
- Enjoy!
