Sour Cream & Chive Baked Potatoes are my weakness. I just love them so much it doesn’t matter if they are fried, mashed, baked, diced or whole. They are naturally gluten free which is a plus for our household too! I especially love my potatoes with sour cream and butter 🙂
Making baked potatoes for me is super easy because I have a microwavable potato pouch that I got at a craft show a few years back. All I have to do is wash the potatoes wrap them in a paper towel and place in the pouch and put in the microwave for about 6-7 minutes and have perfect baked potatoes.
I also love to prepare my baked potatoes in the crockpot! This is a great idea for tailgating, parties or after a long day of work!
Sour Cream & Chive Baked Potato
- 1 whole baked potato prepared
- 1 tablespoon sour cream
- 1 tablespoon butter
- 2 whole fresh chive strands diced
- dash salt and pepper for seasoning optional
- Slice baked potato.
- Mash the inside of the potato with a fork.
- Add sour cream and butter to potato.
- Mix with fork.
- Sprinkle chives on top.
- Add salt and pepper for seasoning if desired.
