Mexican Chicken Lettuce Cups
Sometimes I want something super yummy for dinner, but without all the calories of the original. We love tacos, but these Mexican Chicken Lettuce Cups are a perfect low carb dinner that are super easy to assemble.
I love any meal that starts in a Crockpot and leaves me with very little prep or clean up. This definitely is one of those yummy dishes I am glad to have in my menu plan.
Mexican Chicken Lettuce Cups
I start with a package of boneless skinless chicken breasts for this. It is usually around 1 pound of chicken. Next, I dice up my onion and bell pepper. All of these go into my Crockpot with seasonings and the all-important red wine and lime juice.
This usually only takes 4-5 hours to cook down on a medium heat setting, but if you have a slow cooker that only has high and low, you could put it on low for 6-7 hours and it would be just fine. I love my multi-setting Crockpot for this that can be programmed.
Once the chicken is cooked through and falling apart, I just take two forks and shred it up. Simple, easy and perfectly done all in one dish. No major messes to cleanup! You can use any lettuce you like, but we used red leaf lettuce we had on hand. We prefer these just with the chicken mixture, but you can add in traditional taco toppings if wanted. If you are eating Keto be sure to add plenty of cheese and sour cream!
Mexican Chicken Lettuce Cups
Ingredients
- 1 Pound Boneless Skinless Chicken Breasts
- 1 Tablespoon Cumin
- 1 Teaspoon Garlic Powder
- 1 Teaspoon Onion Powder
- 1 Teaspoon Chili Powder
- 1 whole Juice of 1 Lime
- 1/2 small onion diced
- 1/2 whole green pepper diced
- 1/2 Cup White Wine use FitVine if eating low carb (can sub apple juice)
- 1 head Small Bib Lettuce or personal preferred lettuce
Instructions
- Add all ingredients to Crockpot except for lettuce
- Cook on medium heat 4-5 hours
- Shred chicken with forks and serve in lettuce cups
- May use optional cheese, tomatoes, salsa, avocado, etc. to garnish
These Mexican chicken lettuce cups are a great diet option if you are watching fat, calories or carbs. The lettuce gives you the crunch you are missing as well as makes it fun to eat with your hands like you would a traditional taco.
A sprinkle of cheese, sour cream, avocado, tomato or olives would dress these up a bit more if you wanted. We love them just as they are with our favorite salsa. Comments say red wine but recipe ingredients say white wine, which one should be used?
White Whine. I use FitVine which is low in carbs and sugar but any dry wine will do.
I don’t drink alcohol at all. What can I use to substitute?
Actually I have another question. I just started keto recently, and a lot of the menu plans call for avocado. And I absolutely hate avocado. What can I use to substitute that?

Just thought you’d like to know- the green pepper and onion are missing from the actual recipe- Great recipe either way though- just a little more punch when you include the onion and green pepper though! 😉
