Meatloaf ala Stockpiling Mom Recipe
My dear hubby loves meatloaf and so do I. I created this easy and delicious Meatloaf ala Stockpiling Mom recipe and I hope you enjoy it as much as we do. I love prepping this and freezing to save time when I am ready to cook.
A great tip for freezer cooking is to consider using a Muffin Tin – it saves you so much time on baking and is a great portion control too! I like to serve my meatloaf with Broccoli Casserole and Mashed Sweet Potatoes.

Meatloaf ala Stockpiling Moms
Ingredients
- 1 lb. ground chuck
- 1/2 bottle Heinz chili sauce
- 1 tbsp. dried onion or 1/4 cup onion
- 1/2 cup crushed cracker crumbs
- 1 large egg
- 1/2 cup optional: diced green onions
Instructions
- Mix ingredients and place in a lightly greased loaf pan. Pour remaining Chili Sauce over loaf and bake at 400 degrees for 45-55 minutes or until thoroughly done. Or place into muffin tins and bake for 20-25 minutes.
Meatloaf Tips:
Use plastic gloves when you prepare your meatloaf – It really cuts down on the clean up!

Do you make this..back it..Then freeze it..I am guessing this was fresh ground beef..If so I am going to do this..I am all about not having to worry about things..
Yes, I make it then I freeze it uncooked – thaw and bake!

I’m confused about your recipe, it says 1/2 a cup of chilli sauce and then the instructions say to put the remaining chilli sauce on top, do you put 1/2 of the 1/2 a cup in the meat mixture and then place the rest on top?
Katie…the recipe says 1/2 BOTTLE of chili sauce in the meat mixture. Then use the remaining 1/2 bottle on top.
I love that this recipe is so simple. Is the picture with the muffin tin for this exact recipe or did you double it? Also, did you freeze the mini loafs in the muffin tin the entire time or switch them to another container after they were firm/set? Thanks.
The picture is the exact recipe, not doubled. Switched over to a ziploc bag after they were firm.

My husband would probably like the hot sauce but I am more of a ketchup meatloaf girl. Since I am pregnant and sick I think my way wins this time…Any tips on how I can use this recipe but with ketchup instead. Thanks!
You can sub with ketchup no problem!
What kind of chili sauce do you use? I’m scared to use the wrong one and it comes out too spicy for the kids or tastes too much like vinegar
