This Left-Over Beef Stew Recipe is an amazing meal that is made from leftover vegetable soup. It was so simple to make using my crockpot and all I needed was a little bit of water and cornstarch. I transformed some soup I had left over into a completely different dinner meal for my family, and they loved it!

Recently I made Crockpot Homemade Vegetable Soup with beef roast that I had as leftovers.  I froze the beef to use for future recipes.  One day I pulled it out to reheat for dinner and got to thinking I could easily turn this into beef stew by adding some cornstarch to turn into a gravy mixture.  I am glad that I thought of this idea because it was really good.  I love when I can cook one meal and turn it into two or three.

To do this I put the soup in the crockpot and let it slowly heat up for a couple hours. About 30 minutes before dinner time, I changed the slow cooker to high and added some cornstarch mixed with water.  It was that simple.  I was able to thicken it up and change the meal with only 1 ingredient. I served the Left-Over Beef Stew Recipe with egg noodles and the family loved it!

It is simple to turn the soup into a stew.  Just put the leftover soup in crockpot and heat up on low for 2-3 hours.  Mix cornstarch and water together until cornstarch is dissolved. Minutes before serving beef stew add cornstarch mixture to crockpot, stir and turn on high. Serve over pasta noodles if desired.

  • Left Over Crockpot Homemade Vegetable Soup
  • 2 Tbsp cornstarch
  • 1/3 cup hot water

Instructions

  • Put leftover soup in crockpot and heat up on low for 2-3 hours.
  • Mix cornstarch and water together until cornstarch is dissolved.
  • minute before serving beef stew add cornstarch mixture to crockpot, stir and turn on high.
  • Serve over pasta noodles if desired.
