Instant Pot Parmesan Pasta
One of the best ways to stretch your food when groceries are low is to use pasta as the main part of a meal. This easy Instant Pot Parmesan Pasta recipe is one that is fast, delicious, and cheap. I love nothing more than knowing I can add this and have it on the table in no time. It makes dinnertime easy, and everyone in the house loves it.
Instant Pot Parmesan Pasta
If you’ve never used an Instant Pot for pasta, it’s one of my favorite choices. While it can be a bit tricky to figure out at first, the results now are perfect every time, and it is one way I can set up dinner and walk away to do other things while it cooks. That makes my life much easier. I love this recipe especially because it is so simple and easy to adjust with different veggies or protein.
Variations on Parmesan Pasta
- Cook chicken or shrimp and toss with the pasta before serving.
- Add in broccoli or cauliflower before cooking.
- Stir in diced tomatoes after pressure release and let sit for 3-4 minutes before serving.
- Leave out onions, pepper, and mushrooms and add in asparagus spears instead.
- Serve with lemon wedges to squeeze over pasta for a bit more flavor.
Ingredients
- 1 tbsp olive oil
- 1/2 red onion, diced
- 1/2 green bell pepper, diced
- 8 oz baby Bella mushrooms, diced
- 2 cloves garlic, minced
- 1/4 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp Italian seasoning blend
- 1 lb box rotini pasta
- 4 1/2 cups chicken broth (or water)
- 1/2 cup grated parmesan cheese
Directions
- Turn your Instant Pot on to the saute feature and add the olive oil, onions and bell pepper into the pot.
- Stir the veggies for 3-4 minutes or until they begin getting tender.
- Mix in the garlic and mushrooms, and stir for another 1-2 minutes.
- Pour in the broth or water, and use your wooden spoon to break up any bits on the bottom of the pan. If food sticks to the bottom, it can give a burn error, so this step is important.
- Now, add in the pasta, salt, black pepper, and Italian seasoning and stir together making sure the pasta is covered in water.
- Place the lid to seal, and set to cook for 2 minutes.
- Once the cooking time is over, let the pot naturally release pressure for 10 minutes.
- Release any remaining pressure, and stir the pasta well, if there is still excess liquid, that is okay, simply set the saute function back on and let it cook down a bit more.
- Stir in the parmesan cheese, and taste. Add additional salt if needed.
- Serve alone or with a side of grilled beef or chicken.
