Healthy Turkey Pepper Nachos
We love these Healthy Pepper Turkey Nachos. If you are eating low carb or Keto, you are going to FALL in love with this easy recipe. Saying goodbye to nachos was not possible for me so this is a great alternative.
To make these nachos you literally are going to substitute mini sweet peppers for the tortilla chips. There are only 30 calories and 4.5 grams of carbs per pepper. So depending on how many peppers you use you can calculate the carbs. It is a yummy lean and green meal.
We use ground turkey instead of ground beef because it is a nice heart healthy choice for us. In addition we use gluten free taco seasoning or you make your own taco seasoning to eliminate any added sugar and MSG.
First, I cut the peppers in half and deseed them and remove the tops. I bring a pan of water to boil while I brown the ground turkey and add the taco seasoning just like I would if I was preparing traditional nachos.
I drop the peppers into a pan of boiling water and let them blanch for a few minutes. I remove them with a slotted spoon and then once the turkey is done, I prepare the nachos. Peppers go down first as a substitute for your corn chips. Then the taco meat. We like to use a little prepared queso that I purchase from the grocery store and drizzle that over the top. Then we add a little cheddar cheese, sliced green onion, salsa, sour cream and guacamole.
This Healthy Turkey Pepper Nachos is a delicious and easy recipe. Even my husband enjoys these healthy pepper turkey nachos and that is saying a lot. If it is hubby approved that means it is a keeper.
Healthy Turkey Pepper Nachos
Ingredients
- 1 lb ground turkey
- 1 cup queso
- 1 packet taco seasoning
- 4 TBSP guacamole
- 1 8 oz package mini sweet peppers
- 1 stem green onion
- 4 TBSP sour cream
- 1 cup shredded cheddar cheese
Instructions
- Brown Ground Turkey
- Add Taco Seasoning Packet and follow directions
- While ground turkey is cooking bring water to boiling and add peppers to blanch (2-3 minutes)
- Place a layer of peppers on a plate
- Add seasoned turkey
- Add queso, shredded cheddar, guacamole and sour cream
- Garnish with green onions.
