Easy Vegan Rice Noodle Stir Fry

As we celebrate World Vegan Month in November, we tried out tons of great new to us recipes.  One of these was this Easy Vegan Rice Noodle Stir Fry.  It took just a few minutes to whip up and was a great meal that everyone loved.  Of course, for the meat eaters in our family, I could easily grill some chicken and have on the side, but it isn’t really needed with this recipe.

This is super easy to make for a last minute meal that everyone loves.  We keep most of these ingredients on hand in the pantry or freezer already, so it is always a choice when we want a meat-free meal.

Easy Vegan Rice Noodle Stir Fry

Vegan Rice Noodle Stir Fry Ingredients: 

  • 1 small package rice noodles (usually 10-12 ounce)
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 kohlrabi, sliced into strips
  • 2 stalks celery, diced
  • 1 red or yellow onion, sliced thin
  • 2 cloves garlic, minced
  • 2 teaspoons olive oil
  • 1 teaspoon sesame oil
  • 1 teaspoon ground ginger
  • 1 tablespoon miso paste (found in refrigerated section of Asian stores)
  • 1/4 cup low sodium soy sauce
  • 1/4 cup vegetarian mushroom flavored stir-fry sauce

Directions for Vegan Rice Noodle Stir Fry

Place rice noodles in a pot of boiling water for 2 minutes.  Remove, drain, and set aside.

In large wok or skillet, add olive oil, broccoli, bell pepper, kohlrabi, celery, and onion.  Cook over medium heat, stirring occasionally, for 5-7 minutes or until vegetables are tender.

Add the sesame oil, miso paste, soy sauce, stir-fry sauce, and rice noodles. Mix all ingredients together until flavors combined.  Cook for additional 3-4 minutes or until heated through.
