Crockpot Chicken & Sweet Potatoes
Chicken and Sweet Potatoes are some of my favorite foods to eat. As you may know I love using my slow cooker with my busy life of raising three wonderful boys. I couldn’t imagine my life without a crockpot. It is a great way to free up my time so that I can spend more time with my boys and less time in the kitchen. This is the perfect recipe for fall. I love enjoying this on a cold fall evening or even during the winter.
All you need to make this amazing one dish meal is 5 ingredients! This is an affordable recipe made with boneless chicken, sweet potatoes, butter, brown sugar and cinnamon. I like to pick these ingredients up on sale and then make this for my family. I like to serve this with Sour Cream Rolls and Roasted Broccoli.
Simply place the sweet potatoes in the crockpot. Put chicken breasts on top. Mix melted butter, brown sugar and cinnamon together in bowl. Pour over the top of chicken and sweet potatoes. Place lid on crockpot and cook on low 8-10 hours. When you come home be prepared for the delicious aroma to welcome you! I have even added some green beans directly to the slow cooker for a complete meal!
You can even turn this into a freezer meal by combining your ingredients into a gallon size freezer bag and freezing. When you are ready to cook simply pull the bag out of the freezer the night before and thaw. Place in your slow cooker and cover and cook on low.

Just put it in the slow cooker. I am trying a bunch of minimal prep slow cooker recipes (without much lactose in them) for working mom weeknights. Looking forward to seeing how this turns out!
Yikes. Unfortunately I got home at the 8 hour mark and it was a solid, black charred brick. Definitely cooked on low (I have a Cuisinart from WS). What do you think happened? Was it wrong to “pack” the brown sugar like in baking recipes? That’s the only thing I can think of—-definitely followed the recipe to a T. In the recipe it says to put the potatoes on the bottom, then chicken, then mix up the sugar/cinnamon/butter (but the picture shows raw sugar on top of sweet potatoes). Was interested in trying the apple/SP/chicken option, but a little gun shy. 🙂 Would totally appreciate your thoughts.
