Crockpot 4 Ingredient Potato Soup

4 Ingredient Potato Soup is the perfect soup on a busy day! It is so easy to dump in the crockpot and go.

All you need is potatoes, chicken stock, onions and black pepper. It makes a delicious, creamy soup that is perfect year round. When I have potato soup it brings such comfort and memories from when I was a child.  Itis the perfect soup for the winter months because it is so warm and filling.

This is a simple dump and go crockpot recipe.  Simply place all the ingredients in the slow cooker and stir and place lid on. Cook on low for 6-8 hours. Remove the lid and using a hand masher, gently mash potatoes to make soup thicken up. Stir well and serve.  I love that this is a dairy free soup.  Most potato soups have cream to thicken.  This is perfect for someone who is avoiding dairy or who eats dairy free.  I am personally avoiding dairy so this recipe is perfect for me.

We love to serve this yummy 4 Ingredient Potato Soup with toppings such as shredded cheese, crumbled bacon and chopped green onions. The sky is the limit though. You can totally eat it alone and it tastes amazing or with your family’s favorite toppings. I like it with crackers but my husband loves it with cornbread. Ingredients

  • 6-8 med/large potatoes peeled and cubed
  • 4 cups chicken stock
  • 1/2 cup chopped onion more if you love onions
  • 2 tsp black pepper

Instructions

  • Place all ingredients in crockpot; stir and place lid on.
  • Cook on low 6-8 hours.
  • Remove lid and using hand masher, gently mash potatoes to make soup thicken up.
  • Stir well and serve.
