Weight Watchers Chicken Verde Soup

Have you ever had a soup that was so hearty and satisfying that you couldn’t imagine it was healthy? That’s what our Weight Watchers Chicken Verde Soup is like.  Not only it is super delicious and healthy, it is a great freezer meal!  It works in your Crockpot for fast cooking, and it can be thrown into a freezer bag for later meals!

Weight Watchers Chicken Verde Soup

I love any meals that can be cooked in my Crockpot and are easy for making as a freezer meal.  This throws together in just a few minutes, but can also be prepped for the freezer, thawed overnight, and slow cooked all day for a delicious and an easy to prepare meal everyone loves.

I used chicken I had already cooked and shredded, but you can easily use 3 large chicken breasts with the other ingredients in your freezer bag, then simply shred the meat after it has cooked. Also, I love the Herdez Salsa Verde for this recipe, but you can use any Verde salsa that you prefer.

Weight Watchers Chicken Verde Soup

Ingredients

  • 2 cups chicken shredded
  • 1 cup black beans
  • 1 cup whole kernel corn
  • 1 cup Verde salsa
  • 1 cup mild salsa
  • 6 cups low fat chicken stock
  • 2 cups water
  • 1 bell pepper diced
  • 1 small onion diced
  • 3 cloves minced garlic
  • 1 tablespoon cumin
  • 1 teaspoon salt
  • 1 teaspoon white pepper black pepper is okay if preferred

Instructions

  • Combine all ingredients in Crockpot and cook on low for 3 hours.
  • If using raw chicken breasts in this recipe, cook on high for 4 hours. Reduce setting to low heat, and shred chicken with forks or tongs. Stir the soup well to mix chicken throughout, and cook for an additional hour.

    1. You can import this recipe directly into My Fitness Pal and it will show all of the macros and calories for you. Just drop the URL into the MFP app. It works like a charm.
