Oh how, I love food trucks! One of my favorite things in New York.  Huge tossup between pizza and a food truck!

Slow Cooker Cuban Sandwiches Freezer Meal

This Slow Cooker Cuban Sandwiches Freezer Meal recipe is so good and will become a new family favorite for sure! It tastes like it came straight from a food truck off the streets of New York!

Ingredients

  • 2-3 lb chuck roast trimmed
  • 1 whole onion sliced
  • 1 whole green pepper sliced
  • 1 1/2 tsp cumin
  • 2 whole beef bouillon cubes use gluten free if you desire to make gluten free
  • 1 tsp oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 Tbsp minced garlic
  • 2 Tbsp orange juice
  • 1 whole lime, juiced
  • 2 Tbsp water
  • 1 package Buns for serving
  • 1 jar Mayo for serving
  • 1 whole Avocado, sliced for serving

Instructions

  • Label freezer bag with cooking instructions and date.
  • Place all ingredients into freezer bag.
  • Place in freezer.
  • When you are ready to cook, Thaw in fridge over night.
  • Spray the slow cooker with nonstick spray and dump contents of bag into slow cooker
  • Cook on low for 8 hours.
  • Remove meat and shred, add back into slow cooker and stir.
  • Serve on buns with avocado slices and mayo.
  • Enjoy!

  1. Is it possible to use beef stock or broth instead of the bouillon cubes,…if so, how much would I need to add at time of cooking? Also, I never keep oj concentrate on hand and would prefer to use just regular oj (not from concentrate) instead of only a small amount of a can I would have to otherwise purchase, how much of traditional oj would be needed?

    1. One bouillon cube or 1 teaspoon of granules dissolved in 1 cup of boiling water may be substituted for 1 cup of broth in any recipe. This would actually be adding more liquid to this recipe.

      Orange extract would be a better substitute and 1 TBSP of sugar.

  2. I’m interested if anyone has tried this in their Instant Pot? More often than not, I forget to put the ingredients in the Crockpot before I leave for work and get home and realize I need to make it quickly (and the Instant Pot saves me!).
