Loaded Smashed Red Skin Potatoes

My family loves potatoes and I think I have made them in every way possible.  Loaded Smashed Red Skin Potatoes are the family favorite!  My boys love potato skins and I really hate the trouble of making them.  I figured this is almost the same right!  I tried it and it was a hit.

They now ask for Loaded Smashed Red Skin Potatoes whenever they know we are grilling out.  It is the easiest “like” potato skin I have ever made! I have also made these in bulk for a summer group grill out.  They are so easy to just whip up and everyone loves them.  We have never had a Loaded Smashed Red Skin Potato leftover.  Although, I think they could be popped back in the oven and be just fine.

Just like a potato skin but easier! Perfect side dish or appetizer for any grill out!

Ingredients

  • Red Skin Potatoes
  • Bacon
  • Mild Cheddar Cheese
  • Butter I use spray butter
  • olive oil

Instructions

  • Cook or boil potatoes until soft (I use a Microwave Potato Bag because it is quick and easy! You can find these on Amazon.)

  • Cook bacon crisp and crush in to pieces
  • Coat baking sheet with Olive Oil
  • Place potato on baking sheet and smash with potato masher
  • Spray butter on the tops of the smashed potato
  • Add desired amount of cheddar cheese to the top of each smashed potato
  • Add desired amount of bacon to the top of each smashed potato
  • Bake on 350° for 10 minutes (since every oven cooks differently I check on them after 5 minutes)
