Impossibly Easy Vegetable Pie
Impossibly Easy Vegetable Pie is one of our favorite recipes. I love that it is a Vegetarian recipe and that you can substitute any veggies in your stockpile for it.
You can also make it gluten free by using gluten free Bisquick. This is one of my favorite recipes to serve for brunch or dinner. My family loves the flavor. What I like is this is like a quiche without the pie crust. When you are in a pinch for a quick dinner this is recipe that fits the bill. Ready in less than an hour. It is perfect for busy nights. Of course, the cheese makes it delicious. It is really a simple recipe that takes less than 10 minutes to prepare.
Simply preheat the oven to 400 degrees. Grease a 9″ pie plate. Stir together broccoli/cauliflower, onion and cheese into pie pie plate. Stir together Bisquick, milk, eggs, salt and pepper. Pour into pie plate over veggies. Bake 35 to 45 minutes or until golden brown and knife inserted comes out clean. Cool 5 minutes.
It is crowd pleaser at our house. You can serve it for breakfast, brunch or brinner and you will always have a happy family! You of course can add chicken or turkey to this recipe too. I love sneaking in a few additional veggies into my family’s diet! I like to serve one vegetarian meal a week to my family to help stretch the family budget. This is one of my family’s favorites.

Ingredients
- 2 cups 10 oz pkg frozen broccoli and cauliflower (rinsed and thawed)
- 1/3 cup chopped onion
- 1 cup shredded cheddar
- 1/2 cup bisquick can use gluten free
- 1 cup milk
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 eggs
Instructions

Can this be used as a freezer meal? If so, would I cook it first?
No, it is best to freeze it and then bake it. Add additional time for baking if from frozen or thaw first.
