Easy Gluten Free Quiche

This is an easy gluten free quiche recipe that everyone will enjoy. I have made it with bacon, ham or even meatless. You can use any vegetables that you have on hand.

Easy gluten free quiche:

My friend Brenda passed it to me, and I am so glad she did. I am always looking for easy gluten free recipes and this one is so good! I have used Swiss cheese, parmesan or even an Italian blended cheese. The sky is the limit with this recipe. I like to say, just use whatever you have in your pantry! You can use a red, green or yellow bell pepper, artichoke, spinach or whatever vegetable you have on hand.

I normally serve this easy gluten free quiche with a fruit salad. You can either serve it warm or cold! It is so nice and light and perfect for brunch. I hope you enjoy it as much as I do.

Easy Gluten Free Quiche

This is an easy gluten free quiche recipe that everyone will enjoy. I have made it with bacon, ham or even meatless. You can use any vegetables that you have on hand.

Equipment

  • 1 Pie Plate or Casserole Dish

Ingredients

  • 8 slices bacon
  • 4 oz. shredded swiss cheese (1 cup)
  • 1 1/2 cups milk
  • 1/2 cup almond flour
  • 4 large eggs, lightly beaten
  • 1/4 cup finely chopped onion
  • 1 cup cooked broccoli, finely chopped
  • 2 TBSP salted butter, melted
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper

Instructions

  • Cook bacon until done.
  • Drain bacon and crumble.
  • Preheat oven to 350 degrees. Lightly grease a 9-inch pie plate.
  • Line bottom of the plate with cheese and crumbled bacon.
  • Whisk together milk and flour in a bowl, then whisk in eggs, onion, butter, broccoli and salt and pepper.
  • Pour over the bacon and cheese.
  • Bake until set, 35 to 40 minutes. Cut into 6 slices and serve hot or cold.

Notes

You can use any vegetable or cheese of your choice. You can also use ham or eliminate the meat altogether.
