Crockpot Honey Rosemary Chicken

Crockpot Honey Rosemary Chicken is one of my favorites easy chicken recipes. I love the sweetness of the honey combined with the rosemary. This is a very easy chicken recipe to put together as a freezer meal. It is naturally gluten free and paleo recipe too.

Crockpot Honey Rosemary Chicken is tasty served alone or on top of rice. This is a great freezer meal recipe!

You can assemble this chicken dinner in less than a few minutes as a freezer meal by placing the ingredients into a gallon size freezer bag.  Then just simply lay it flat in the freezer and when you are ready to use it just let it thaw out in the fridge overnight. I like to serve it on a bed of rice or with a Loaded Sweet Potato.

I will warn you that Crockpot Honey Rosemary Chicken does not look pretty when it is finally cooked, BUT with that being said do not let that keep you from making and trying this recipe. This Honey Rosemary Chicken tastes absolutely delicious and healthy too! My husband and I thought it was scrumptious and gobbled it up. So please trust me that this easy chicken recipe IS really good!

Ingredients

  • 4 whole chicken breasts cut into bite size pieces
  • 1/3 cup balsamic vinegar
  • 1/3 cup honey
  • 1/3 cup olive oil
  • 3 Tbs rosemary chopped or you can use dried rosemary
  • 1 tsp salt

Instructions

  • Label and write the following instructions on your bag - Add 1 cup water and cook on Low 6-8 hours.
  • Add all ingredients to bag.
  • Lay flat in freezer.
  • When ready to prepare, pull bag out of freezer and let thaw overnight in fridge.
  • Pour contents of bag into crockpot, add water and cook on Low 6-8 hours.
  • Serve and enjoy!

    1. You can use 1 tablespoon cider or red wine vinegar plus 1/2 teaspoon sugar to substitute for 1 tablespoon balsamic vinegar.

      I found this recipe years ago while assembling freezer meals while i was expecting a baby. We made 30 meals that day, if my memory is serving me well, this is the only recipe we still use to this day. I love it over creamy mashed red potatoes. It is outstanding!

  1. Hi, it says bite sized pieces, but in the picture you have posted, it looks more like chicken breast halves. Can you be more specific on how big or small are the chicken pieces are supposed to be please?

    1. Substitute for Rosemary
      For fresh rosemary substitute:

      1/4 tsp dried rosemary for each tsp fresh required
      OR Equal amounts of oregano
      OR Basil

      For dried rosemary substitute:
      Dried savory, tarragon, or thyme.

      Equivalents
      1oz dried rosemary leaves = 9 tbsp.
      1 tsp. leaves = 3/4 tsp. crushed leaves
      4 tsp fresh = 1/4 tsp dried leaves

When I took it out of the fridge this morning after dethawing it overnight there were white pieces that at first I thought were mold but looking closer and touching it through the bag it was “mushy” and kind of reminded me more of like a Crisco look/texture. Is this normal? Is this the honey and olive oil mixing together? Looked pretty gross so I’m wondering if something went bad (don’t know why it would have as I put it right in the freezer after I made it). I have it cooking now but am a little nervous… Thoughts?

    1. Yes, it is just the oil. No concern 🙂 It will be fine once it thaws all the way.

  4. I made this yesterday and it was delicious! I have two picky kids and even they loved it! It was perfectly balanced not to sweet and not to salty. I will definitely be making this again.

  5. It calls for “four” chicken breasts, but the ones I buy are HUGE and about a pound a piece. How many actual POUNDS of chicken should this need? And thank you 🙂

    1. Go with one-two pounds of chicken depending on how hungry your crew is 🙂 I agree it seems like boneless chicken breasts can be huge!
