Crock Pot Salsa Chicken - Only 3 ingredients in this low carb dish that the whole family will love!
I love this low carb and gluten free Crockpot Salsa Chicken that is topped with Kraft cheese – with only 3 ingredients it is so easy to make in your slow cooker.  Your family will love this recipe that can easily be flipped into a lettuce wrap or soft taco.  The Kraft cheese makes this an entree that everyone will be requesting on your menu plan.
You can easily twist this delicious Crockpot Salsa Chicken into a taco by cutting up the chicken breast or using chicken tenders.  Simply take leaf lettuce or tortillas to make your own twist on tacos.  It is easy to prepare and your whole family will love the taste.   I love that it is only 3 ingredients and can be prepared in the slow cooker.  I simply place the cooked chicken into a greased baking dish and then add on the Kraft Cheese to twist this dish into a family favorite!  It is just not the same without the bubbly cheese on top.

I love to prepare this while we are at soccer practice and come home to a delicious dinner that we all love.  I can eat the low carb version while my boys can enjoy the full carb version.  A twist that makes every member of my family happy.  This is an inexpensive recipe that is a crowd pleaser and with only three ingredients it is one that I can prepare in less than 5 minutes!  My secret ingredient is the 2 cups of shredded Mexican Cheese that I use at the end!  Feel free to use more or less but we always say more cheese is better!  This is also a delicious Keto Friendly Recipe if you are following the Keto Diet.

Crock Pot Salsa Chicken

Ingredients

  • 1 1/2 lb chicken breasts boneless, skinless (or any cut of chicken that you prefer)
  • 1 1/2 cups fresh salsa
  • 1 1/2 cups shredded cheese Kraft Mexican Blend

Instructions

  • Lightly grease your crockpot with olive oil.
  • Place the whole chicken breasts (or cut of chicken that you prefer) in your crockpot and pour the salsa over it.
  • Cook for 2 hours on high
  • Preheat oven to 425 F degrees
  • Place chicken in a lightly greased baking dish and cover with salsa from the crockpot draining all liquid.
  • Top with cheese and bake for 15 minutes. The sauce and cheese will begin to bubble when done.
  • Optional - garnish with fresh cilantro and Breakstone Sour Cream if desired.
  • Enjoy with rice, tortilla or leaf lettuce or just as is!

    Now that is just about as yummy looking as it gets. We love chicken and I can’t seem to find enough recipes for it so we don’t get tired of it.   3. This looks like something my family would love! We always have Kraft Mexican cheese blends in the refrigerator! When it is on sale, I buy extra and freeze it – this cheese is used a lot in our family!

      I have a great crock pot I think you would love…it makes this and SOOO MANY recipes one pot! like chilli, Brown beef on stove + the rest, stick pot on base to slow cook! For this it would go from cooking on crock to in oven for cheese! The base can even be used without the pot for grilled cheese or pancakes or whatever – it was perfect in college! I can’t member the name unfortunately (but I have 2 because I use it So much and stick the lid on to keep leftovers!) but if your in the crock isle at a big box store, it’s around $20 at w-mart, it’s a rectangular shape pan, with a base that plugs in and a lid – and it’s teflon so not only easy to clean, but the oil isn’t needed! I have to say being able to cook the meat or whatever on the stove first and just are the rest to start the crock is my favorite – I hate dishes!

  8. I have been looking for more recipes like this for my crock pot that I recently purchased. I am such a fan of anything with salsa, but have never tried it with chicken. The hint of sour cream on top really seals the whole dish in for me.

  9. I have had a crock pot for at least 3 years and have literally used it twice! Is that crazy? My husband is so afraid of me leaving it on cooking while we are out and about. I am going to have to convince him it is safe, because this recipe looks simple and delicious.

      I am 36, started cooking when my dad was disabled at 14 so I needed dinner ready when he got home so for more than half my life well 22 years I have used it a few times a week! Mine is rectangle and comes off the base to go on the stove or in the oven, so for chili I grown the beef for chili beans or brown the pork and cook the flour for green chili then add the rest and toss it on… I try a recipie at home once, I prefer low and slow (so all day while gone, but also if I need it to be less time I plug it into a timer that turns off and on whatever is plugged in)….I love my crock, well I think it’s a slow cooker since it doesn’t use a “crock” insert,but that’s why it can go on the stove or melt this cheese in the oven! To make him comfy try using it on a laundry day or a yard work day…where it can be checked on… I love it best when I am to sick to cook, but people still have to eat – so I use canned beans and beef for chili, cooks all day, so flavorful! Also I like to grill a ton of chicken in the summer and slice or dice some for the freezer – then when cold season hits its frozen veg with the chicken, broth and twice as long before as it says to cook noodles (I love grandma’s brand frozen noodles, they remind me of gma) I toss them in and turn it from low to high – feel better soup – zero fuss!

  10. I’ve recently asked my hubby for a crock pot because I think I’d be more inclined to prepare a meal. He does all the cooking and I’d like to do more. This is a great recipe because I’m so over our typical chicken dishes. Will have to try.

  11. I love crock pot recipes, salsa chicken is the best, I have made this recipe, well sort of like it. It looks delicious! It is great making in the am, then going to work. Then it is done when you get home.

  12. We use our slow cooker a few times every week, usually trying at least one recipe from StockpilingMoms! I’ll have to add this recipe for crock pot salsa chicken to the rotation! Nothing in this delicious meal that my family wouldn’t like!

  13. The only thing I would change is buy the cheese in a block and shred it yourself. Other then that, it definitely looks great.

    I’ve been making this for 10+ years. You can do in the oven also with the same results. only difference is we wait till 15 minutes before we remove to add the cheese.

    1. You can use any brand you would like. I personally use Sabra but you can use anything you find on sale.

        1. It really won’t extend the cooking time. I have cooked it in 6 hours before on low. Hope that helps!
