This Chicken Avocado Egg Salad recipe is absolutely ah-mazing and so easy to make!  I have been trying to eat clean and gluten free and looking for new things to eat.  So I have been trying to come up with recipes that are simple with good for you ingredients, but I also do not want them to be time consuming. I want something that I can make quickly and this recipe is spot on for that!  This recipe is a great low carb recipe!  Perfect if you are eating a Keto Diet. 

This Chicken Avocado Egg Salad recipe is gluten free and clean eating with only 5 ingredients! Only 5 minutes to make and it tastes amazing.

All you need is some shredded chicken, half of an avocado, one hard boiled egg, mayo and black pepper. Yes, that is all the ingredients you will need! Mix everything together in a bowl and enjoy for lunch or a quick dinner on the go.  Next time I make this I am going to have it for dinner (it’s already on the menu for this week!) and scoop it inside of lettuce wraps! Chicken Avocado Egg Salad

Ingredients

  • 1/2 cup or 4 oz shredded chicken
  • 1/2 an avocado peeled and cubed
  • 1 hard boiled egg diced
  • 1 tsp black pepper
  • 1 Tbsp mayo I used Hellman's Olive Oil Mayo

Instructions

  • Put all ingredients in a bowl and mix together.
  • Enjoy!

  1. can you eat anything from the breakfast, lunch and dinner choices in a day or do certain things have to be staggered…say, like the avacado?
