Crockpot Onion Beef Roast
Here is a super easy Crockpot Onion Beef Roast recipe that is great as is and in left over recipes. I love getting a large roast on sale at the store and then saving leftovers for more delicious recipes.
My Kroger is a super store, so they have a section for meat clearance every day. I usually head for that section first when shopping for meat. I then bring it home and cook right away or divide and freeze for later. It’s a great way to save money.
For this recipe you only need four ingredients – beef roast, can of beef consommé, minced onion and butter (which are all low carb and Keto Diet friendly). Yes, it is really that simple. Mix all ingredients in the crockpot, set it and forget about it all day. To make place the roast in the crockpot. Pour in the can of beef consommé. Sprinkle minced onion on top. Place butter on top. Add salt and pepper, if desired. Place lid on and cook on low 8 – 10 hours. Remove from crockpot shred to serve.
The beef roast will be so tender and moist. My family loves when I serve Mashed Potatoes, Roasted Asparagus and Fruit Salad with the beef. Be sure to try it soon, you will not be disappointed! Ingredients
- 3-4 lb beef roast
- 1 can beef consommé
- 2 Tbsp minced onion
- 3 Tbsp butter
- 1/4 tsp. salt and pepper for seasoning optional

- Place roast in crockpot.
- Pour in the can of beef consomme.
- Sprinkle minced onion on top.
- Place butter on top.
- Add salt and pepper, if desired.
