Macaroni and Cheese Salad is a simple side dish that is packed full of carbs and protein. This is a recipe that my Mother-in-Law made for my husband growing up. It is super affordable, and the flavor combination may sound strange to some, but it really is delicious!

You may think this one is a little strange. I did until I gave it a try. It is super easy to make, and you can use bacon that you fry or microwave bacon. We like the addition of the boiled eggs because it makes this dish protein filled. It is a very affordable recipe that helps stretch your grocery budget.

When my husband told me he ate this often as I child I was surprised. After giving it a try I realized how good it is.

Macaroni and Cheese Salad

Ingredients

  • 1 box Kraft Macaroni and cheese
  • 6 slices bacon cooked and crumbled
  • 6 large hard boiled eggs chopped

Instructions

  • Cook macaroni as directed on carton.
  • Prepare macaroni and cheese as directed on carton.
  • Stir in cooked and crumbled bacon and chopped eggs.

This recipe comes from my Mother In Law, Brenda Hice. She used to make this often for her boys growing up.

  1. This is also good if you add chopped tomatoes and chopped pickles…sounds weird to add pickles but it is sooo yummy.
