You’ll want to start with finding some quality turkey pepperoni and a simple baguette. I use Schwan’s whole wheat baguettes, but there are many in the grocery deli or bakery area to choose from. You’ll want to double-check the point values, but most whole wheat baguettes are going to be similar in points value.
I use fat-free Cabot sharp cheddar or Monterey jack cheese. I really prefer the fat-free Cabot brand since it melts better than others. Typically, fat-free cheese doesn’t melt well, so this brand is far superior. Use your preferred brand but look for fat-free or at least 2% cheese. If you use a higher fat value, make sure to double check the points values.
Cut your baguette in half lengthwise and add your marinara. I like to put a small sprinkle of cheese on top of the sauce then top with my turkey pepperoni and black olives. You can easily add any veggies you want to this dish, but since we were making this kid-friendly, it was pretty simple. Top with the rest of your cheese and pop into the oven for 12-15 minutes or until the cheese is melted.
Slice each baguette into 8-10 pieces. These are small bites, but they are satisfying and a great option for game day that you can enjoy along with everyone else, and account for in points easily!
