Slow Cooker Winter Squash and Apples

Simply prep and freeze and when you are ready to prepare thaw in your refrigerator overnight. Best of all you simply dump into in the crock pot for the day and go. I love crockpot dump and go recipes because they take less than 10 minutes to prep and dinner is ready when you walk in the door.
To prep as a freezer meal simply place all of the ingredients in a gallon size zip loc bag and freeze. When ready to prepare thaw in the refrigerator overnight. Place into the slow cooker and cook on low for 4-6 hours Salt and pepper before serving if desired, I like to add a little extra cinnamon and nutmeg for a spicier flavor profile. When you come home you will have a delicious vegetarian dinner or side dish that is ready for your family.

Slow Cooker Winter Squash and Apples
Ingredients
- 1 whole butternut squash 1 lb
- 2 whole apples peeled, cored and sliced
- 1/4 tsp salt/pepper - optional
- 1/4 cup olive oil or Ghee
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1/4 cup lemon juice
- 1/4 cup unsweetened applesauce no sugar added
Instructions
- Place all ingredients in a zip loc bag.
- Freeze
- When ready to prepare thaw in the refrigerator overnight.
- Place into the slow cooker and cook on low for 4-6 hours
- Salt and pepper before serving.
