I found this recipe at New Leaf Wellness and decided it was so good I needed to share it with all of you!  This spicy chicken chili crockpot recipe was a great dinner on an unusual cold evening in May here in Kentucky. I served the delicious meal with a side salad and Mexi-ranch dressing.

Ingredients

  • 1 lb boneless skinless chicken breasts
  • 1 medium size yellow onion chopped (1 cup)
  • 1 green pepper chopped
  • 1 cup frozen corn
  • 1 pkg taco seasoning
  • 1 10.75 oz can of condensed tomato soup
  • 1/4 lb shredded cheddar cheese
  • 1 box of Jiffy Corn Mix

    My Family really loved this recipe, so now I am wanting to double it and I am wondering if I should also double the cornbread? (If you think it would cook and/or if you think there’s enough room) I bought the .6-Quart Programmable Cook and Carry that was recommended on your page.

    1. Check and see if Amy’s has a brand that is gluten free and dairy free.

      You can make your own substitute for tomato soup.

      8 oz tomato sauce
      1 Tablespoons sugar
      1 Tablespoon cornstarch

    I was skeptical about the corn bread but it was a great touch..added black beans to it. Lots of cheese and sour cream once plated. Would make again.

    We loved this. Made it with beef instead of chicken. Also, the second time we forgot to put it in the crock pot, so I put it in the oven in an 8 x 8 pan and baked it for 25 mins at 400. Then made the corn muffins separetly. We ate the chili with Late July tortilla chips. It was so yummy!
