Mixed Berry Salad
Mixed Berry Salad is a refreshing salad perfect for lunch or a light dinner. I made this salad ahead of time the other night and put it in a mason jar to take on a lunch outing that I had the next day. Did you know if you store your berries and salad in a glass jar, they will stay fresh longer?
Be sure to check out Salad in a Jar. I used fresh ingredients that I had in my fridge to make this very easy salad. It is great for lunches all week long and tastes amazing. You can also make this salad the same exact way.
If you use a gluten free salad dressing or make your own from olive oil, lemon juice and garlic this becomes a great Paleo lunch on the go! It is perfect for a nice and fresh lunch in the summer. I love to add fruit to my salad especially in the summer when I purchase items from the local farmer’s market. Be sure to try this light and fresh lunch idea.
Ingredients
- 1/2 cup strawberries
- 1/2 cup blackberries
- 1 large hard boiled egg cut up
- 2 cups romaine lettuce
- 4-5 tbsp pomegranate dressing (or dressing of your choice)
Instructions
- Place lettuce in bowl.
- Sprinkle egg pieces on top of lettuce.
- Place berries on top and pour dressing all over.
- Enjoy.
