Homemade Egg McMuffin
This Homemade Egg McMuffin is a super easy easy recipe which is perfect for breakfast and a favorite when we visit my Mother-in-Law. It is one of my favorite breakfasts and I love when she serves it! You can easily substitute another type of meat. Best of all this could also be made with a gluten free McMuffin too! Be sure to give this a try! Homemade Egg McMuffin is our favorite on the go breakfast sandwich!

- 1 English Muffin
- 1 Slice of American Cheese
- 1 Egg - Fried Over Easy
- 1 Slice of Canadian Bacon

Instructions
- Fry one egg over easy, heat Canadian Bacon in skillet.
- Toast English Muffins.
- Place egg on bottom half of English Muffin, top with Cheese and Canadian Bacon

For those that don’t like to fry your egg, I cook mine in the microwave in a small round pyrex lid sprayed with pam. I beat the egg with a scant tablespoon of water. Pour it into the Pam sprayed dish and cook it on 50% power for a minute and 30 seconds (may have to adjust cooking time depending on your individual microwave). This works great for a quick morning breakfast. Being cooked in the round lid, it fits the bun shape and makes a neater looking sandwich.
So easy and delicious!

An Egg McMuffin is my favorite breakfast item at McDonalds so I make them at home all the time. Like Dianne, I use a round ramekin that I spray with Pam (you won’t get the egg out if you don’t!) Crack the egg into the ramekin and break the yolk with a fork, then cover and microwave for about 45 seconds. Then put it on a lightly toasted English Muffin with American cheese and Canadian bacon. I also add grape jelly to my muffin…it’s sooo good that way! 😀
