Hashbrown Casserole
Hashbrown Casserole is one of my favorite recipes! It was passed onto me from my mom. The perfect copycat to Cracker Barrel’s hash brown casserole recipe. This is the perfect side dish that you can prep ahead and bake on the day of your event. It is a crowd pleaser for sure!
We have served this at many family functions. It is great at a dinner or a brunch. You honestly can’t go wrong with hashbrown casserole at any meal. Be sure to give this easy casserole a try. You use the hashbrowns frozen, so it is really easy to make. I have also used thawed or fresh hashbrowns and that works too!

Hashbrown Casserole
Equipment
- 1 9x13x2 inch casserole dish
Ingredients
- 2 pound bag O'Brien Shredded Hashbrowns
- 8 ounces sour cream
- 2 cups shredded cheddar cheese
- 1 can cream of chicken soup
- 1 stick salted butter, melted (we reduce to 1/2 stick)
- 1/4 tsp. onion powder
- 1/4 tsp. garlic powder
Instructions
- Butter a 9x13x2 baking dish.
- Mix ingredients and place in a 9x13x2 prepared baking dish.
- Bake at 400 degrees for 30-40 minutes or until golden brown.

Did you thaw the potatoes before putting the casserole together?
No, you don’t. I just be sure to make sure they are separated (by banging the bag on the counter).
The hashbrown casserole is fantastic! So easy to make too! I see cream of chicken soup in my stockpile future..lol
I’ve ended up making this quite a few times since I last posted the above comment. I love it! I also have it in the morning with 2 fried eggs on top of it..so good!
My husband’s family makes this a lot! They put crumbled corn flakes on top. Really good!
I use 2 cans of cream of potato soup instead.
