I am so excited to find a crockpot shrimp fajita recipe that is delicious, made in one dish and an easy cleanup. If you are looking for a seafood slow cooker recipe this is for you! I love making fajitas but I do not like the clean up of the kitchen afterwards, so this easy slow cooker recipe is perfect for me! I also like that I can prep this as a freezer meal and have on hand whenever I am in the mood for some Mexican food. This is a great low carb recipe too! Simply serve it on a low carb tortilla OR enjoy it on a bed of lettuce. Trust us you will not miss the added carbs of the tortilla if you do! Add cheese, sour cream and avocado for the healthy fat and enjoy!
It is a dump and go crockpot recipe. Place all the ingredients except shrimp in crockpot and cook on low 5-6 hours. Next place shrimp in slow cooker, mix well and turn on high for another 30-45 minutes.
You can make your own taco seasoning too! I love to make my own because then I know the ingredients in it and it can easily be gluten free! - 2 green peppers sliced
- 2 red peppers sliced
- 1 to mato quartered
- 1 onion sliced
- 1 lb raw shrimp deveined and peeled
- 1/2 cup chicken broth
- 1 taco seasoning packet
- 1 tsp chili powder
- 1/2 tsp paprika
- 1 tsp salt
Instructions
- Place all ingredients except shrimp in crockpot and cook on low 5-6 hours.
- Next place shrimp in slow cooker, mix well and turn on high for another 30-45 minutes.
- Serve on tortillas with your favorite toppings.

Trying this today, I love the crock pot when it’s too hot to use the oven.
The recipe is deceiving. I think you would get better results sautéing this rather than slow cooking. After five hours in the crockpot there was so much liquid that it resembled soup. And because it was watered down it needed more seasoning. I would try it again, but in a wok next time.
