This Crockpot Loaded Baked Potato Soup is so yummy and perfect for a cool Fall evening. With our cooler weather here in Kentucky I have been enjoying many soup recipes for dinner. The day I made this Crockpot Loaded Baked Potato Soup is was a wet, cold and very gloomy day and this soup was spot on for dinner.

My husband, kids and I enjoyed it so much. There was no need for me to blend any of the soup it creamed together on its own and that’s a huge plus for me! Less work and a huge time saver! Plus, I only needed simple ingredients which I had on hand in my pantry. All you need for this delicious Crockpot Loaded Baked Potato Soup is potatoes, onion, chicken broth, garlic, butter, cream and shredded cheese. All these simple ingredients blend together for a very creamy, hearty soup.

Combine all ingredients in a 6 QT slow cooker except for heavy cream and cheese. Cook on low for 8 hours. Next mash potatoes until coarsely chopped and soup is slightly thickened. Add cream and cheese and cook another 30 minutes. Serve and enjoy.

Let everything slow cook all day and you will have a very comforting dinner. You can serve with extra cheese, chopped green onions and chopped bacon. This Fall/Winter season be sure to try this scrumptious Crockpot Loaded Baked Potato Soup!

Ingredients

  • 6 Large Potatoes peeled and cubed
  • 1 Large Onion diced
  • 1 Quart Chicken Broth
  • 2 Garlic Cloves minced
  • 1/4 Cup Butter
  • 1 Cup Heavy Cream
  • 1 1/2 Cup Shredded Sharp Cheddar Cheese
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  • Combine all ingredients in a 6 QT slow cooker except for heavy cream and cheese.
  • Cook on low for 8 hours.

    This was delicious! I added bacon and green onions at the end for a Loaded Potato Soup. Makes a big pot and had plenty leftover.
    For some reason, I couldn’t rate it 5 stars. defiantely making this again
