Crockpot Black Bean Fajitas Recipe is a flavorful, vegan slow cooker freezer meal!

Crockpot Black Bean Fajitas Recipe is a great dinner for the family and can also be prepared as a freezer meal!   I served the Black Bean Fajitas on tortillas with sour cream, shredded lettuce and cheese for my boys and I enjoyed it on a bed of streamed white rice.

Crockpot Black Bean Fajitas Recipe is so good and it’s an easy freeze slow cooker supper that everyone will love.  My whole family loved this complete crockpot dinner meal and they want me to make it again soon!  I was surprised because they are normally fans of protein but the black beans are a great way to stretch your family budget.  Be sure to make this crockpot freezer meal, you will not be disappointed.  This is also naturally gluten free.

Be sure that you invest in a good quality slow cooker.  Our favorite is this programmable cook and carry 6qt oval slow cooker.  I hope your family enjoys this Crockpot Black Bean Fajitas Recipe as much as mine did!

Crockpot Black Bean Fajitas Recipe

Cook Time:8 hours
Total Time:8 hours 5 minutes

Ingredients

  • 3 peppers sliced
  • 1 can 14.5 oz black beans, drained and rinsed
  • 1 onion sliced
  • 1 Tbsp honey optional sub agave or coconut nectar or maple syrup for honey
  • 1 Tbsp apple cider vinegar
  • 1 Tbsp chili powder
  • 2 tsp ground cumin
  • 1 tsp paprika
  • 1/4 tsp crushed red pepper flakes

Instructions

  • Place all ingredients in a freezer bag.
  • Mix to evenly distribute.
  • Flatten and store in freezer.
  • When ready to cook, defrost in fridge overnight.
  • Place in slow cooker and cook on low for 8 hours.
  • Serve on tortillas and top with lettuce and shredded cheese.

Notes

If desired you can sub agave or coconut nectar or maple syrup for honey.

  1. My husband insists on having meat with dinner… Do you think this would go good with ground beef, turkey, or chicken? Which would you recommend and how much? Would I have to change the quantity of any of the other ingredients if I added meat when prepping the freezer bag?

    1. I think it would go well with beef. I am thinking I would 1/2 the beans and use beef in its place.

    Technically not vegan, as recipe includes honey, and many vegans are pretty strict about that. Looks great regardless though (I personally have no problem with honey). I am 28 weeks pregnant with my first baby and using your guide, plus some freezer to grill recipes to make ahead a months worth of dinners, so I really appreciate these posts! Thank you!

    Eight hours would have been way took long for these. I cooked them about three hours and the beans were already turning to mush.

    I subbed poblano peppers for the green peppers, added a small tin of sweet corn at the very end of cooking, and served the fajitas on fresh corn tortillas from the tortillerĂ­a around the corner, plus some Mexican sour cream. They were very good, with just enough seasoning. I’d definitely make them again.

    I used this recipe as filling for enchiladas and it was delicious! I’m a meat lover but i really didn’t miss it with all the wonderful flavours that come out of this dish. It really doesn’t look like much so i was a little apprehensive when i saw it cooked, but it was so good. would absolutely make again.

    This is AMAZING. I’ve never done any crockpot anything really and always have meat in meals. I was leary about this as it contains no meat, but it was FANTASTIC. Couldn’t even tell. I’m eating the leftovers for lunch today. Lol.

    This has become a staple in our house! I always double the recipe for our family of six and serve with Mexican-style rice and wraps (as suggested). The double recipe still fits in one freezer bag. Great way to use up bell peppers and SO easy to throw together! I find six-ish hours on low works well for my slow cooker. Thanks for the great recipe!
