Instructions
- Preheat oven to 350 degrees F.
- In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, and melted butter.
- Pour into a greased 9x11 casserole dish. Bake for 45 minutes, or until golden brown at 350 degrees.
- Remove from oven and top with Cheddar.
- Return to oven for 5 to 10 minutes, or until cheese is melted.
- Let stand for at least 5 minutes and then serve warm.

This was a pretty good recipe. If I make it again, I would cut down on the butter and cheese. We thought it was a little greasy.

It reheats well as leftovers. You can also mix it up in advance, cover and refrigerate and then bake it at the time you need to serve.
This may be a stupid question, but do you prepare the jiffy how it says on the box or just use the powder mix?
Just use the mix and follow our directions.

Wait, so is there 2 eggs in this recipe? This has been my mom’s go to recipe for Thankgiving Corn Casserole for years and now I just wanted to make it for dinner ; But I’m confused because in the ingredients section it says 2 eggs, but in the instructions section it is not included. I’ve never made it with egg before and honestly can’t remember how my did it.
