Italian Pasta Salad
Italian Pasta Salad is the perfect side dish on a warm summer day. You will fall in love with this vegetarian salad that makes the perfect side at a party or BBQ. It is really affordable, and you can use any vegetables that you have on hand from the garden or farmer’s market.
You can use a gluten free pasta or a whole wheat pasta if you prefer. Feel free to use any veggies that you enjoy. I have used broccoli florets, red pepper, red onion, yellow pepper, cucumber and black olive. Often it is whatever I have on hand that I need to use up. You can even add feta cheese if you desire.
Be sure to give this Italian Pasta Salad recipe a try. It is perfect for a summer BBQ or picnic. We take it to family gatherings often. I like to mix it up and enjoy it all week.
Ingredients
- 3 cups 8 oz rotini past, cooked, drained and rinse with cold water
- 2 cups broccoli florets
- 1/2 cup chopped red pepper
- 1/2 cup chopped red onion
- 1/2 cup pitted black olives sliced, drained and rinse with cold water
- 1 cup Zesty Italian Dressing
Instructions
- Toss all ingredients except dressing in a large bowl. Add dressing and mix lightly together. Refrigerate for several hours or best overnight.
