Healthy & Easy Gluten-Free Weeknight Meal Ideas. Busy weeknights can make it tough to manage both healthy and easily gluten-free meals for our family.  With limited time between school, errands, homework, and bedtime, I need something that is fast, delicious, satisfying, but still healthy and for me, most importantly, gluten-free.  I have recently discovered some great things to help make my mealtimes easier to manage on those busy nights.

Our son loves pizza, and if I am honest, so do I. However, pizza typically doesn’t love me.  I was excited to try out Freschetta Gluten Free frozen pizza.  I knew he would love pizza for dinner, and I would love the convenience of just popping it into the oven. The big bonus is that I don’t have to make two separate meals.  I can enjoy a slice of pizza that is not just gluten-free, but delicious!  I decided to share not only my thoughts on the pizza but some great ways to make it an easy and healthy meal.

Serve with a side salad.  I love a great salad to help get more vegetables into my diet.  One of my favorites is a great choice to go along with the Freschetta Gluten Free pizza.  An antipasto salad is a great choice that can be customized for those eating and can be healthy when you use a light or low-fat vinaigrette.

Build Your Own Antipasta Salad Bar

Build an Antipasto Salad: 

  • Iceberg Lettuce
  • Black Olives
  • Pepper Rings or Pepperoncini
  • Tomato
  • Ham, Salami, or Pepperoni
  • Mozzarella
  • Vinaigrette or Greek Dressing

Add extra veggie toppings before baking.  While I love the choices offered in the Freschetta Gluten Free pizza line, I find that I prefer more vegetables sometimes. Adding more toppings can make a single piece much more satisfying, and of course, helps you stay healthier while enjoying an easy weeknight meal.

I tend to prep vegetables in advance each week for recipes and salads, so having extra bell pepper, onions, tomatoes, broccoli, and things like olives, pepperoncini, or even some lean ham or grilled chicken on hand is easy.  Toss those items onto the pizza before it goes into the oven to create a heartier dinner option that is healthy, gluten-free, and delicious.

Offer marinara or ranch for dipping.  One thing that helps kids feel more satisfied is if they can dip their food.  I love slicing the pizza into smaller pieces and offering small bowls of marinara sauce or low-fat ranch dip.  We can dip our crust or pizza into the dip, and it makes it feel more decadent, while still being easy to make and healthier.  I mix ranch mix with greek yogurt for a low-fat, high-protein option.
