Easy Weeknight Meals for Busy on The Go Moms. It is a crazy time with all of the spring activities we have on our calendar. As a busy on-the-go Mom that means that it is time for me to get creative with quick and easy menu plans.
We spend several school nights each week on the field and every weekend at games. I am a true sports Mom. I don’t miss a single game if possible and one of us is at every single practice which means menu planning is so important for me. I always include one of my children’s favorite recipe each week. All of my children love Spaghetti and Meat Sauce. It is so affordable, so it is a go-to for easy menu planning.
My goal during this busy season is to prepare quick and easy weeknight meals that my family will love. I utilize my slow cooker and look for meals that can be prepared in less than 30 minutes. By menu planning and prepping meals in advance I can save money and time in the kitchen. Every day I make a to-do list and try to look for the most convenient way to go about completing each item. I take the worry about what is for dinner by sitting down each Sunday and planning our menu for the week.

Oven Baked Spaghetti Casserole
Carb loading before a game is important and most kids loves spaghetti with sauce. I love that I can prepare gluten free noodles and it is a meal my entire family can enjoy. We also like to enjoy it over zucchini noodles or spaghetti squash too to incorporate more veggies!
