I make my meat loaf with ground turkey and lean ground chuck. I add to it diced purple onion, green and yellow peppers and green chilies which is optional. I add one egg which acts as a binder. Two sleeves of crushed Ritz roasted vegetables crackers and a fourth of a cup of ketchup and mix with hands. It can be pe made into a loaf or into muffin tins. Add ketchup on top and sprinkle crushed Ritz crackers on top bake in oven at 350 degrees for 30- 40 minutes. This is my husbands favorite!
